  • 450g/1 lb raspberries
  • 600ml/1 pint white wine vinegar
  • 225g/8 oz sugar

How to make Raspberry Vinegar

  1. Allow 600ml/1 pint white wine vinegar to each 450g/1 lb raspberries
  2. Crush the fruit in a large bowl and pour the vinegar ove
  3. Leave to steep for 3 days, stirring often
  4. Strain through a muslin-lined sieve into a large measuring jug
  5. Add 225g/8 oz sugar to each pint of juice in a pan and heat to boiling
  6. Boil for 10 mins then pour into sterilised jars and seal tightly
  7. Keep the vinegar out of direct sunlight and use within one year
