HOW TO MAKE BLACKBERRY JAM

In preparation prior:

  1. During the evening beforehand, layer the blackberries and jam sugar together in a large bowl
  2. Cover the bowl and set aside
  3. Stir together the next morning until you are set to begin

When making the jam:

  1. Before beginning, place a small saucer in the freezer
  2. Tip the berries into a preserving pan
  3. Scrape out all the juices and undissolved sugar
  4. Stir in the lemon juice and collect the pips
  5. Secure the pips in a tea-leaf strainer before adding to the pan
  6. This step will help the jam to set as it extracts the pectin
  7. Put the blackberries over a low heat until the sugar has dissolved entirely
  8. Now bring to the boil and simmer for 5 minutes
  9. Turn off the heat and spoon a small amount of jam onto the chilled saucer
  10. Lightly push in with your finger after a minute has passed
  11. If it wrinkles, it has reached the setting point
  12. If it is still runny, return the pan to heat
  13. Repeat after around 3 minutes with the same test
  14. Skim off any ‘scum’ that has accumulated
  15. Stir in the knob of butter, only a finger-size is necessary
  16. Leave to cool for 15 mins
  17. Scoop the jam into your sterilised jars so the fruit can settle
  18. Wait for the jam to cool completely and store in a dark place.
  19. Blackberry jam can be stored for 6 months unopened
