RED ONION MARMALADE - "HOW TO MAKE" RECIPE FROM THE JAM JAR SHOP

If you want to try something new that is packed full of flavour, make red onion chutney that choice. Perfect for storing in our round jam jars, hexagonal jars or whichever container takes your fancy from our huge collection.

Recipe Equipment

  • Sterilised glass jar(s)
  • 1 Large saucepan
  • Wooden spoon

 

Recipe Ingredients

  • 2kg red onions or regular onions
  • 4 garlic cloves
  • 140g butter
  • 4 tbsp olive oil
  • 140g golden caster sugar
  • 1 tbsp fresh thyme leaf
  • A pinch of chilli flakes 
  • 75cl bottle red wine
  • 200ml port
  • 350ml red wine vinegar

HOW TO MAKE RED ONION MARMALADE

  • Chop the onion in half.
  • Thinly slice the onion and the garlic.
  • Add butter and oil to the saucepan on a high heat.
  • Add the onions and garlic while stirring.
  • Add the sugar, chilli flakes, thyme leaves and salt & pepper
  • Reduce heat slightly and stir intermittently for around 45 mins.
  • Test to see if the onions are soft by pressing against the pan with a wooden spoon –
  • the juices should have evaporated, and they should be sticky.
  • If needed, add on additional time until sufficient softness.
  • Now add the wine, vinegar, and port consecutively.
  • Simmer on a high heat for around 30 minutes, stirring occasionally.
  • Aim to reduce the liquid by around 2 thirds or more.
  • Test if it is ready by running your wooden spoon across the bottom of the pan –
  • If the path quickly fills up with syrupy juice, it is ready.
  • Let the onions cool while still sitting in the pan.
  • Once cool, transfer them into your sterilised jars and seal.
  • The marmalade can be stored for up to 3 months if refrigerated.

 

A cheese sandwich would taste great with this marmalade addition, and it also pairs terrifically well with terrines.
